Assuming you have the required files to support your language (and it
works from the Preferences page), you can set the default in the
Greenstone /etc/main.cfg file:

cgiarg shortname=l argdefault=it

This sets the "l" parameter (for language) to "it" if it isn't already
set by the user in the preferences page.
