It is not bibtex plugin that is responsible for formatting of the
display results... that is done by the collection's collect.cfg file.
I recall you said that you copied one of the example collections.
That collection is made up of bibtex entries for papers, which is
why the collection says Paper and not Book, and why it doesn't
have Chapter.

How to configure your collection is covered in (I think) the
Greenstone User's Guide.
