for our Greenstone setup we have two servers. One, running Windows, is
used to develop the collections. Another is running Greenstone under
Apache on Debian GNU/Linux.

I'm currently trying to work out the easiest way to update collections
on the "production" server to match what's on the development server.
Has anyone else done something similar and do you have any advice?

What directories need to be copied across?

My plan just now is to use a simple rsync setup, although that doesn't
allow a lot of flexibility in terms of copying some parts but not others.
