This book is designed as a source of teaching material for teachers of agriculture in sub-Saharan Africa who wish to introduce a food and nutrition component into their training programmes. Resource material, presented in boxes, tables and figures, has been selected from the widest possible range of African countries (mainly English-speaking) and ecological regions. The material is elaborated in nine chapters covering such topics as the food chain and links among agriculture, nutrition and food security; food supply systems in Africa; food and dietary diversification; food storage and processing; nutrients and diets; malnutrition and micronutrient deficiencies; and nutrition education. With selection and adaptation of the material to meet specific needs, the resource book may be used for diploma and bachelor’s degree-level courses in fields such as general agriculture, agricultural extension and agricultural education; for in-service training courses, workshops and seminars for agricultural extension agents, rural development workers, administrators of agriculture and of rural development programmes, and government policy-makers in food, nutrition and agriculture; and for in-service education of secondary-school, college and university teachers of agriculture.
