This question has been asked once before that I remember -- but it took me a while to find it! See:
The basic steps are the same as installing Greenstone yourself:
1. Install Greenstone on the host server (it might have to be compiled, depending on what OS they're using).
You will need the help of the host server administration to do these tasks.
Regarding ISPs who already know about Greenstone, Beth Nicols (see the thread above) used pair.com and found them helpful.
