Think you it's work,
but are there any ways to do this just for a single collection, because I use realistic book for just one collection the other colections I use pdf and images.

For making the book viewer mode on by default give the following string in main.cfg which is available at the [GSDLHOME]/etc folder.
cgiarg shortname=book argdefault=on

When you do this , all the files avaiable in other collections will also be displayed as realistic book.
