A good place to start for learning about interface customization is a document
called "Customizing the Greenstone User Interface". This was kindly written by
Allison Zhang of the Washington Research Library Consortium, and is linked to
near the bottom of this page: http://www.greenstone.org/english/docs.html
The formatting and macrofile languages are also described in sections 2.3 and
2.4 of the Greenstone Developer's Guide (available on the same page).
