I've just done this for a collection of photographs, eg:
http://clients.stephenroke.com/cgi-bin/neon?a=sd&d=s000

Unfortunately you need to change the C++ code and recompile it to enable
this functionality. Edit the Greenstone "src/recpt/vlistbrowserclass.cpp"
file and change line 176 from

perline = 1;

to

perline = 3;

(or however many columns you want).

I meant to make this configurable using a CGI argument (or a collect.cfg
option) but ran out of time. I'll try to remember this for the next
release.
