Most of what ou ask is i n the first part of the developers guide, and in the demonstration collections
Take a look at the image collection (in the demonstration collections download) - I think is does everything you seem to be asking.

I think you need to change the contents of 'DocumentText' in the 'format' section of your collection configuration

In 'format' again you will need to use the [srclink] directives. usually [srclink][dc.Title][/srclink]

You can include inline css style directives
eg <span style="font-family:Arial,Verdana,san-serif;"> [your text here]</span>
I hope this helps.
PS Greenstone can take up a lot of time...it does a lot more than iPhoto or filckr ( it has different goals)
if you are new to it, it might be risky using it for a major project.
