The mac binary of greenstone comes with the demo collection, unbuilt.
(This is to save space on the download, and also because collections
built on an Intel machine won't work on a PowerPC machine.)
You will need to build it yourself, either from the command line or
by using The Collector. Check that the Collector is enabled in the
etc/main.cfg config file.
