I have books (a few pages only) that I imported using the PagedImgPlug plugin, metadata are imported in XML format (and some books with text files). I have indeed problems with diacritics (I can't seem to be able to import in Greenstone any diacritics, I have tried to save in UTF-8, in ANSI, etc. none works. I think I have the same problem as someone has on the list with German language...); hence so far, none of my document's metadata holds diacritics.
I believe the extracted metadata are somehow picked up by Greenstone because I built some classifers based on these values... it's just that I can't seem to be able to see them in the Enrich panel.
The doc.xml file from the Archives show the metadata (though it doesn't say 'ex.metadata'), here is an extract:
<Metadata name="Title">Quatrieme esquisse</Metadata>
<Metadata name="Author">Pirenne, Henri</Metadata>
<Metadata name="Type">Chapitre de monographie</Metadata>.
It's not such a big issue though because if we go for Greenstone, we'll go with a web library installation, where this issue may not occur. But I'm happy to try things if you have other ideas!

What kind of documents do you have? Some file types don't display their extracted metadata, such as bibliographic files.
Do your documents have non-Latin characters in their filenames? Perhaps the matching up of the extracted metadata in the archive files with the file in the import directory is not working.
Have you checked in the archive doc.xml files that there is extracted metadata?
If you have got a file in the collection with a Latin filename, check its metadata - can you see extracted metadata here?
